How to make Heart Healthy Honey Sriracha Salmon

Most people, when they think of “healthy food,” think of boring and bland options—cardboard, dreadful dishes that leave their taste buds longing for excitement. Typically, they don’t consider something tasty that would make them ask for seconds. Well, I’m hoping to debunk this misconception and provide you with a delicious, heart-healthy recipe that will change your mind and be enjoyable for your palate: Air-fried Honey Sriracha Salmon with Brown Rice and Braised Bok Choy. This recipe contains heart healthy foods: whole grains, protein-rich fish, and vegetables.

Air-fried Honey Sriracha Salmon with Brown Rice and Braised Bok Choy

Ingredients

  • 4 Salmon Filets
  • 1/2c Sriracha
  • 1/4 Honey
  • 1T Brown Sugar (or more if you want it sweeter)
  • 2t Soy Sauce
  • Lime wedge
  • Brown Rice
  • 1 Large Head Bok Choy
  • 2T Olive Oil
  • 1-2t Minced Garlic
  • 3/4c Chicken Broth
  • Salt & Pepper
  • Red Pepper Flakes as garnish (optional)

For Braised Bok Choy:

Prep before cooking: Cut off end, pull leaves apart, and then clean leaves by placing in a large bowl sprinkle with baking soda and vinegar and add water. Allow to soak in a bowl for 10-15 mins before you drain and rinse. Once rinsed, pat dry.

To cook:

In a large skillet, over med-high heat add 2T of olive oil, once warm, add 1-2t of minced garlic, stir until aromatic (1-2 mins),then add bok choy and stir for a few mins. Add 1c of chicken stock, put heat on low, cover, and allow to simmer for at least 8-10 mins. Once stalk is softened to desired liking, remove from heat, season with salt and pepper, and enjoy.

For Brown Rice: Cook according to packaging.

For Honey Sriracha Sauce: Make by mixing 1/2c Sriracha,1/4 Honey, 1T Brown Sugar (or more if you want it sweeter), 2t Soy Sauce in a bowl until smooth.

Clean and pat salmon dry, season with salt and pepper, coat with honey Sriracha sauce. Line the bottom of Air Fryer with foil (or air fryer lining). No air fryer? The oven works just as well. Add salmon to the air fryer (or oven) and cook at 400° for 8 mins. Baste salmon with sauce and cook for another 5 mins. Squeeze with a little lime juice for more robust flavor and place on top of brown rice with a side of bok choy. Garnish with red pepper flakes and enjoy! 😀
